  • 1 bunch fresh asparagus (trimmed (about 1 lb))
  • 2 cups cherry tomatoes
  • 3 tbsp olive oil (divided)
  • 1/2 tsp salt
  • 1/4 tsp freshly cracked black pepper
  • 1 ball of fresh burrata cheese (about 4 oz)
  • 2 tbsp pine nuts (toasted)
  • 2 tbsp fresh basil leaves (for garnish)
  • 1 tbsp balsamic glaze or a drizzle of fresh lemon juice (optional)

Instructions

1️⃣ Prepare the Vegetables:

  1. Preheat a skillet or grill pan over medium-high heat.
  2. Toss the asparagus with 1 tbsp olive oil, a pinch of salt, and pepper. Grill for 3–4 minutes, turning occasionally, until tender and lightly charred. Set aside.
  3. In the same pan, heat 1 tbsp olive oil. Add the cherry tomatoes and cook for 4–5 minutes, shaking the pan occasionally, until they blister and soften. Season with a pinch of salt and pepper.

2️⃣ Assemble the Salad:

  1. Arrange the asparagus on a serving platter.
  2. Scatter the blistered cherry tomatoes over the asparagus.

3️⃣ Add Burrata and Garnish:

  1. Place the burrata in the center of the platter. Drizzle it with 1 tbsp olive oil.
  2. Sprinkle toasted pine nuts over the dish.

4️⃣ Finish and Serve:

  1. Garnish with fresh basil leaves and, if desired, a drizzle of balsamic glaze or lemon juice for added flavor.
  2. Serve immediately as a side dish or light main course with crusty bread.
