2 apples, peeled and diced
2 tbsp brown sugar
1 tsp cinnamon
⅓ cup brown sugar (swirl)
1 tsp cinnamon
½ cup butter, softened
⅔ cup sugar
2 eggs
2 tsp vanilla
1½ cups flour
1¾ tsp baking powder
⅓ cup milk
⅓ cup chopped walnuts + extra for topping
½ cup powdered sugar
1–2 tbsp milk
¼ tsp vanilla
Instructions
Prep the apples: Toss diced apples with brown sugar and cinnamon. Set aside.
Make the swirl: Mix ⅓ cup brown sugar with 1 tsp cinnamon in a small bowl.
Make the batter: Cream butter and sugar until fluffy. Beat in eggs and vanilla. Whisk flour and baking powder separately; add to batter alternately with milk.
Assemble the loaf: Grease a 9×5″ loaf pan. Add half the batter → half the apples → swirl mixture → walnuts. Repeat layers. Lightly press everything down so apples bake in.
Bake: Bake at 350°F (175°C) for 50–60 minutes until a toothpick comes out clean. Cool 10 minutes in the pan, then transfer to a rack.
Glaze: Mix powdered sugar, milk, and vanilla until smooth. Drizzle over cooled loaf and top with extra walnuts.
