- 1 cup almond flour
- 1¾ cups powdered sugar
- 3 large egg whites (room temp)
- ¼ cup granulated sugar
- ½ tsp cinnamon
- Pinch of salt
- 1 medium apple, finely diced
- 2 tbsp brown sugar
- ¼ tsp cinnamon
- 1 tsp lemon juice
- 1 tsp cornstarch + 1 tbsp water (slurry)
- ½ cup unsalted butter, softened
- 1½ cups powdered sugar
- 1 tsp vanilla extract
- ½ tsp ground cinnamon
- 1–2 tbsp heavy cream
- Sift almond flour and powdered sugar together.
- Whip egg whites and salt until frothy, then gradually add granulated sugar until stiff peaks form.
- Fold in dry mix and cinnamon. Pipe into circles on parchment and let rest 30 minutes.
- Bake at 300°F for 15–17 minutes.
- In a saucepan, simmer apple, brown sugar, lemon juice, and cinnamon until tender.
- Stir in the slurry to thicken. Let cool.
- Beat butter until fluffy. Add powdered sugar, cinnamon, vanilla, and cream. Mix until smooth.
- Pipe a ring of buttercream on one shell, spoon a little apple pie filling in the center, and sandwich with another macaron.
- Place in an airtight container and chill overnight.
