Cozy, caramelized, and bite-sized apple pie cookies that bring the flavors of traditional apple pie in a mini treat.

  • ⅓ cup brown sugar
  • ¼ cup granulated sugar
  • 1 egg yolk
  • 1 tsp vanilla
  • 1¼ cups flour
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 2 apples, sliced
  • 1 tbsp butter (for apple topping)
  • 2 tbsp brown sugar (for apple topping)
  • ½ tsp cinnamon (for apple topping)
  • ¼ tsp nutmeg (for apple topping)
  • ¼ cup caramels (for caramel drizzle)
  • 1 tbsp milk (for caramel drizzle)

Instructions

  1. Cream butter and sugars, then add egg yolk and vanilla. Mix in dry ingredients. Chill for 20 minutes.
  2. Sauté apples with butter, sugar, and spices for 5–7 minutes.
  3. Shape dough into small bases and top with sautéed apples.
  4. Bake at 175°C (350°F) for 12–15 minutes. Cool.
  5. Melt caramels with milk and drizzle over cookies.

Notes

  • For a richer flavor, use a mix of sweet and tart apples.
  • Store cookies in an airtight container for up to 3 days.
