  • 3 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar (for meringue)
  • 1/2 teaspoon vanilla extract (for meringue)
  • Cinnamon powder, for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9-inch round cake pan.
  2. In a bowl, whisk flour, baking powder, and salt. In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each. Stir in vanilla. Alternate adding flour mix and milk, mixing until smooth.
  3. Pour batter into pan and bake for 22–25 minutes until a toothpick comes out clean. Let cool completely.
  4. For apple filling: In a saucepan, combine apples, sugar, lemon juice, and cinnamon. Cook over medium heat for 8–10 minutes. Mix cornstarch with water and stir into apples. Cook until thickened, then cool.
  5. For whipped cream: Beat cold cream, powdered sugar, and vanilla until stiff peaks form. Spread half over the cooled cake base. Spoon cooled apple filling over cream layer, then add remaining whipped cream on top.
  6. For meringue: Beat egg whites and cream of tartar until soft peaks form. Gradually add sugar while beating to stiff peaks. Beat in vanilla. Pipe or spread over the top.
  7. Optional: Use a kitchen torch to toast the meringue or broil for 1–2 minutes, watching carefully. Dust with cinnamon before serving.
