2 large apples (Granny Smith or Honeycrisp), peeled and diced
1 cup all-purpose flour
1/4 cup granulated sugar
1 1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
1/3 cup milk
2 eggs
1 tsp vanilla extract
1 tbsp butter, melted
Vegetable oil (for frying)
For the Glaze:
1 cup powdered sugar
1–2 tbsp milk
1/2 tsp vanilla extract
Instructions
In a bowl, combine flour, sugar, baking powder, cinnamon, and salt. In another bowl, whisk eggs, milk, vanilla, and melted butter. Stir wet into dry, then fold in the chopped apples.
Heat vegetable oil in a deep pan to 350°F. Scoop tablespoon-sized portions of the batter and gently drop into the oil. Fry until golden brown and crisp.
Remove with a slotted spoon and let rest on paper towels.
Whisk powdered sugar, milk, and vanilla until smooth. Dip warm fritter bites into the glaze.
Let the glaze set for 5 minutes, or dig in warm.
Notes
These bites are best enjoyed warm.
Adjust the glaze consistency by adding more or less milk.
Can be served with coffee, cider, or on their own.
