Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 cup (2 sticks) unsalted butter, cold & cubed
  • 68 tbsp ice water
  • 3 cups peeled, chopped apples (Granny Smith or Honeycrisp)
  • 1 ½ cups fresh cranberries
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 tbsp cornstarch
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tbsp butter (to dot on filling)
  • 1 egg (for egg wash)
  • Coarse sugar (for topping, optional)

Instructions

  1. Make the Buttery Pie Crust: Combine flour, salt, and sugar. Cut in cold butter until crumbly. Add ice water one tbsp at a time until dough comes together.
  2. Chill and Roll: Divide dough in half, form discs, and chill for at least 1 hour. Roll out one disc into a pie dish.
  3. Prepare the Cozy Filling: Mix apples, cranberries, sugars, cornstarch, cinnamon, nutmeg, lemon juice, and vanilla in a bowl.
  4. Assemble the Pie: Pour filling into crust, dot with butter. Roll second disc and cut into lattice strips or lay whole. Seal and crimp edges.
  5. Bake to Golden Perfection: Brush with egg wash and sprinkle coarse sugar. Bake at 400°F (200°C) for 45–50 minutes until bubbling and golden.

Notes

  • Let the pie cool before slicing for best results.
  • Use a mix of tart and sweet apples for a balanced flavor.
  • Coarse sugar on top adds a nice crunch.
