2 ½ cups all-purpose flour
1 tsp salt
1 tsp sugar
1 cup (2 sticks) unsalted butter, cold & cubed
6–8 tbsp ice water
3 cups peeled, chopped apples (Granny Smith or Honeycrisp)
1 ½ cups fresh cranberries
¾ cup granulated sugar
¼ cup brown sugar
2 tbsp cornstarch
1 tsp ground cinnamon
¼ tsp ground nutmeg
1 tbsp lemon juice
1 tsp vanilla extract
1 tbsp butter (to dot on filling)
1 egg (for egg wash)
Coarse sugar (for topping, optional)
Instructions
Make the Buttery Pie Crust: Combine flour, salt, and sugar. Cut in cold butter until crumbly. Add ice water one tbsp at a time until dough comes together.
Chill and Roll: Divide dough in half, form discs, and chill for at least 1 hour. Roll out one disc into a pie dish.
Prepare the Cozy Filling: Mix apples, cranberries, sugars, cornstarch, cinnamon, nutmeg, lemon juice, and vanilla in a bowl.
Assemble the Pie: Pour filling into crust, dot with butter. Roll second disc and cut into lattice strips or lay whole. Seal and crimp edges.
Bake to Golden Perfection: Brush with egg wash and sprinkle coarse sugar. Bake at 400°F (200°C) for 45–50 minutes until bubbling and golden.
