Buttery, fruity, coconut-crunchy and downright addictive Apple Coconut Butterscotch Pastries!

Ingredients

  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • 2 apples, peeled and thinly sliced
  • 1 tablespoon lemon juice
  • 1 tablespoon brown sugar
  • ½ teaspoon cinnamon
  • ¼ cup shredded coconut
  • 2 tablespoons brown sugar
  • 2 tablespoons flour
  • 2 tablespoons cold butter, cubed
  • ¼ cup brown sugar
  • 2 tablespoons butter
  • 2 tablespoons heavy cream
  • Pinch of salt
  • ½ teaspoon vanilla extract

Instructions

  1. Toss apples with lemon juice, brown sugar, and cinnamon. Set aside.
  2. Mix coconut, flour, sugar. Cut in butter until crumbly. Chill.
  3. Preheat oven to 375°F (190°C). Cut puff pastry into rounds. Score smaller circle inside each. Brush edges with egg.
  4. Fill centers with apples, top with crumble. Bake 18–22 minutes until golden. Cool.
  5. For butterscotch: melt butter and brown sugar, stir in cream, cook till thickened. Add vanilla and salt. Drizzle over cooled pastries.

Notes

  • Serve warm for the best flavor.
  • Can be stored in an airtight container for up to 2 days.
