A perfect fall cookie combo with a gooey caramel twist, combining the flavors of apple, cinnamon, and caramel into a soft, chewy cookie.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp cream of tartar
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup finely chopped apples (peeled)
  • 1 tbsp lemon juice
  • 1/4 cup caramel sauce (plus more for drizzling)

Cinnamon Sugar Coating:

  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon

Instructions

  1. Mix the dry ingredients: In a bowl, whisk together flour, baking soda, cream of tartar, salt, and cinnamon.
  2. Cream the butters & sugars: Beat butter, brown sugar, and granulated sugar until fluffy. Add egg and vanilla.
  3. Add the apples & caramel: Toss apples with lemon juice, then gently fold into the dough along with the caramel.
  4. Chill & roll in cinnamon sugar: Chill dough for 30 minutes. Roll into balls and coat in cinnamon sugar.
  5. Bake & drizzle: Bake at 350°F (175°C) for 10–12 minutes until golden and soft. Drizzle with more caramel once cooled.

  • Use fresh apples for the best texture and flavor.
  • Chilling the dough helps prevent spreading.
  • Drizzle caramel while cookies are warm for better absorption.
