4 slices thick‐cut brioche bread
1/2 cup almond cream (frangipane or almond pastry cream)
1/4 cup raspberry jelly or preserves
2 eggs
1/2 cup milk
1/2 tsp vanilla extract
1 tbsp honey
Butter or ghee, for frying
Powdered sugar, for dusting
2 tbsp sliced almonds, toasted
Maple syrup or honey, for drizzling
Instructions
Spread almond cream on one brioche slice, top with another to make a stuffed sandwich. Repeat.
In a shallow bowl whisk eggs, milk, vanilla, and honey until smooth.
Dip each sandwich into the egg mixture, soak a few seconds per side. Melt butter or ghee in skillet over medium heat. Cook sandwiches 2–3 minutes per side until golden and crisp.
Warm the raspberry jelly slightly, spoon over each stuffed toast. Sprinkle with toasted sliced almonds, dust with powdered sugar and drizzle with maple syrup or honey just before serving.
Notes
Add a handful of fresh raspberries and a sprig of mint for color.
