A fluffy, creamy, and elegantly nutty almond cream layer cake, perfect for celebrations.

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 1/2 cups sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 cup buttermilk
  • 1 1/2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1/2 teaspoon almond extract
  • 1/2 cup toasted slivered almonds
  • Edible flowers for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line three 8-inch cake pans.
  2. In a bowl, whisk flour, baking powder, baking soda, and salt.
  3. In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla and almond extract.
  4. Add flour mixture alternately with buttermilk, beginning and ending with flour. Mix just until combined.
  5. Divide batter evenly into pans and bake for 22–25 minutes. Cool completely.
  6. Whip cream with powdered sugar and almond extract until stiff peaks form.
  7. Layer cakes with whipped cream between each, then frost top and sides lightly.
  8. Sprinkle with toasted almonds and garnish with edible flowers.

Notes

  • Don’t overmix the batter for a soft crumb.
  • Toast almonds for deeper flavor.
  • Can be made a day ahead and stored in the fridge.
