2 medium zucchinis, sliced into ¼-inch rounds
1/2 cup breadcrumbs (or panko for extra crunch)
1/4 cup grated Parmesan cheese
1 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1 large egg, beaten
Cooking spray or olive oil spray
Instructions
Prep the Zucchini: Slice the zucchinis into even ¼-inch rounds for that perfect crispy texture.
Mix the Coating: In a bowl, combine breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
Dip and Coat: Dip each zucchini slice into the beaten egg, then coat evenly with the breadcrumb mixture.
Air Fry to Perfection: Place slices in a single layer in the air fryer basket. Spray lightly with olive oil. Air fry at 400°F (200°C) for 8–10 minutes, flipping halfway through.
Serve and Enjoy: Serve warm with marinara, ranch, or spicy mayo for dipping.
Notes
For extra crunch, use panko breadcrumbs.
