Crispy, high-protein chicken egg rolls made in the air fryer for a quick and healthy snack.

Ingredients

  • 2 cups cooked shredded chicken
  • 1/2 cup canned black beans (drained & rinsed)
  • 1/2 cup corn kernels
  • 1/3 cup diced red bell pepper
  • 1/3 cup diced green bell pepper
  • 1/4 cup chopped fresh spinach
  • 1/4 cup shredded mozzarella or pepper jack cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt & pepper to taste
  • 1 tbsp olive oil (for brushing)
  • 10 egg roll wrappers

Instructions

  1. Mix chicken, black beans, corn, bell peppers, spinach, cheese, and seasonings in a bowl.
  2. Place 2 tbsp of filling in the center of each wrapper and roll tightly.
  3. Brush each egg roll with olive oil and place in the air fryer basket in a single layer.
  4. Air fry at 375°F (190°C) for 10–12 minutes, flipping halfway.
  5. Let cool slightly and serve with your favorite dip.

Notes

  • Ensure egg rolls are not overlapping for even cooking.
  • Use any dip like salsa or ranch for extra flavor.
  • Adjust seasonings to taste.
