- 2 cups cooked shredded chicken
- 1/2 cup canned black beans (drained & rinsed)
- 1/2 cup corn kernels
- 1/3 cup diced red bell pepper
- 1/3 cup diced green bell pepper
- 1/4 cup chopped fresh spinach
- 1/4 cup shredded mozzarella or pepper jack cheese
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt & pepper to taste
- 1 tbsp olive oil (for brushing)
- 10 egg roll wrappers
- Mix chicken, black beans, corn, bell peppers, spinach, cheese, and seasonings in a bowl.
- Place 2 tbsp of filling in the center of each wrapper and roll tightly.
- Brush each egg roll with olive oil and place in the air fryer basket in a single layer.
- Air fry at 375°F (190°C) for 10–12 minutes, flipping halfway.
- Let cool slightly and serve with your favorite dip.

- Ensure egg rolls are not overlapping for even cooking.
- Use any dip like salsa or ranch for extra flavor.
