- Salt and pepper (to taste)
For the Garlic Butter Sauce:
- 3 tbsp unsalted butter
- 3 garlic cloves (minced)
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 tsp black pepper
- 1/4 tsp crushed red pepper flakes (optional)
- 2 tbsp fresh parsley (chopped (plus extra for garnish))
Instructions
1️⃣ Cook the Tortellini:
- Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions. Reserve 1/4 cup pasta water before draining, then set aside.
2️⃣ Sauté the Shrimp:
- Heat olive oil in a large skillet over medium-high heat. Season shrimp with salt and pepper.
- Add shrimp to the skillet and cook for 2–3 minutes per side, until pink and opaque. Remove and set aside.
3️⃣ Make the Garlic Butter Sauce:
- In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Stir in the heavy cream, Parmesan cheese, black pepper, and crushed red pepper flakes (if using). Simmer gently for 2–3 minutes, stirring constantly, until the sauce thickens slightly.
4️⃣ Combine:
- Add the cooked tortellini to the skillet with the sauce. Toss to coat. Add the reserved pasta water if needed to loosen the sauce.
- Return the cooked shrimp to the skillet and gently mix.
5️⃣ Serve:
