Ingredients
1 lb shrimp, peeled and deveined
1 tbsp olive oil
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp paprika
Salt & pepper to taste
1 cup shredded cheddar cheese
1 cup diced tomatoes or pico de gallo
1/2 cup sliced jalapeños (optional)
1/2 cup chopped cilantro
4 large flour tortillas
Instructions
1. Toss shrimp with olive oil, chili powder, garlic powder, paprika, salt, and pepper.
2. Sear shrimp in hot skillet for 2–3 minutes until opaque and golden.
3. Warm tortillas in a skillet or microwave.
4. Layer cheese, shrimp, tomatoes, jalapeños, and cilantro in each tortilla.
5. Roll tightly and grill seam-side down in skillet to melt cheese and crisp exterior.
6. Slice in half and garnish with cilantro. Serve hot!
Notes
Use medium heat to avoid burning tortillas.
Avoid overcooking shrimp—they become rubbery.
Great with sour cream, salsa, or guacamole on the side.
