Description
This Ground Beef & Veggie Stir-Fry Rice Bowl is a quick, protein-packed meal with comforting flavors and colorful vegetables. Perfect for lunch, dinner, or easy meal prep in under 20 minutes.
Ingredients
1/2 lb ground beef
1 cup cooked white or jasmine rice
1 tbsp olive oil or butter
1/2 cup frozen mixed vegetables (broccoli, cauliflower, carrots)
1 egg, scrambled
1/4 tsp garlic powder
1/4 tsp onion powder
Salt and black pepper to taste
Optional: soy sauce or hot sauce for extra flavor
Instructions
1. Cook ground beef in a skillet over medium heat until browned, about 5–6 minutes.
2. Season with garlic powder, onion powder, salt, and pepper, then remove from skillet.
3. In the same pan, scramble the egg until cooked through and set aside.
4. Add a little more oil, then stir-fry frozen mixed veggies for 4–5 minutes until tender.
5. Return beef and scrambled egg to skillet and stir together.
6. Add cooked rice and mix everything thoroughly.
7. Drizzle in soy sauce or hot sauce to taste.
8. Stir until heated through and evenly combined.
9. Serve warm in a bowl.
Notes
Pre-cook your rice to save time.
Drain beef if it’s too greasy for a lighter bowl.
Pat veggies dry after thawing to avoid extra moisture.
